<p>We are opening our flagship chocolate kitchen on the first Saturday of every month throughout the year so we can share some of the essential skills of totally hand made fine chocolates.</p>

<p>The day begins at 1pm with an introduction to paul.a.young and what makes us so unique in the chocolate world. Then a vertical chocolate tasting from the bean through some of the world’s finest bean to bar producers and cocoa bean varieties.</p>
<p>The hands on section of the afternoon begins with a ganache master class teaching you how to create a silky smooth ganache with some very unexpected ingredients.</p>
<p>Next a demonstration by our Head Chocolatier of marble slab tempering, the vital skill to master and perfect so your chocolates will have a silky, smooth and world class shine. You will also have the opportunity to try your hand at hand tempering.</p>
<p>Truffle shells, filling, rolling, coating and decorating. – We will show you all the tricks of the trade to make your truffles stand out in the crowd from simple piping designs to very artistic decorations.</p>
<p>This is a hands on experience which may mean you get a bit messy.</p>
<p>8 people maximum per class.</p>

<p>March 2nd, April 6th, May 4th, june 1st, July 6th, August 3rd, September 7th, October 5th, November 2nd.</p>

<p>Paul has created two exclusive recipes only available at Fortnum and Mason, not even in our shops.</p>
<p><strong>New </strong><strong>Rose and raspberry brownie </strong>with its vibrant raspberry reduction and floral rose essential oil and <strong>Sichuan flower pepper, stem ginger and chilli</strong> for warming anyone&#8217;s cold autumn evening.</p>
<p>Two of our favourite recipe brownies will also be available our famous classic fudge brownie and slated caramel and cocoa nib.</p>
<p>With demonstrations, tastings and book signings being planning at Fortnums we hope to see you in store for some very indulgent events.</p>

A. Young fine chocolates on Thursday 19th July from 7-9pm.</p>
<p>The evening will begin with a brief discussion about the business, what we represent and the process of how chocolate is produced from the pod through the bar format we are all accustomed to.</p>
<p>A vertical chocolate tasting will guide you through some exciting and mouthwatering varieties of rare, single origin, blends, raw chocolate and the very intoxicating 100% Liquor.</p>
<p>Paul will share some of his trade secrets with you and give you all the information you will need to be able to select and buy the finest chocolate available.</p>
<p>Paul will then demonstrate marble slab tempering the impressive and vital skill in creating fine chocolates.</p>
<p>Finally you will have the opportunity to taste our famous sea salted caramel which has just been named as the best Caramel in the International chocolate awards 2012.</p>

				<content:encoded><![CDATA[<p>Each year in August, Wallpaper* magazine commissions a number of artists and image makers to work on covers for its Handmade issue. This year they approached <a href="http://www.wallzo.com/">Darren Wall</a>  and his collaborator Kam Tang, who in turn came to Paul.</p>
<p>Paul worked with Michael, head chocolatier in the <a title="Wardour Street, Soho" href="http://www.paulayoung.co.uk/shops/wardour-street-soho/">Soho store</a> to create a uniform geometric inspired design with individual moulded blocks of white chocolate, with one gold wrapped block to give the piece depth and focus. The beautiful result made the cover below.</p>
